A Boozy Way to Make Galbi Healthier

It is a fact that a high-fat diet of grilled meats such as samgyeopsal and galbi along with consumption of alcohol increases the risk of stomach cancer, because cooking meats at high temperatures produces carcinogens called HA’s (heterocyclic amines).  As for what alcohol does to your system, you know.

Scientists in Portugal, however, may have found a way to change the meaning of having wine with your steak.  According to researchers reporting in the New Scientist, the simple solution (besides reduction in your intake of grilled meats) may lie in the order of drink.   By letting your meat marinate in wine or beer before cooking it, scientists have found, the amount of HA (cancer causing compounds) was reduced by as much as 90-percent.

Say that again?  Let your meats have a drink first, so that you won’t have to ingest the nasty chemical by-products that can lead to cancers in your digestive tract.

Perhaps it’s time for you to pour a little soju on your galbi before you cook it?  No word yet on where this knowledge is catching on, but you can certainly try it at home.  The upside of this, as reported in the research results, is that the meat will even taste and smell better.
